Gallo Pinto is a traditional dish from Costa Rica that combines rice and black beans, offering an exceptional and nutritious taste. It is often enjoyed at breakfast but can be eaten anytime. This simple and quick recipe will bring authentic flavors to your table. Let's see how we can prepare it!

Ingredients:

- 300 g black beans (1 cup)
- 250 g rice (1 cup)
- 2 green bell peppers
- 2 large onions
- 3 carrots
- 2 pieces of parsnip
- 1 zucchini
- 1 cube of butter
- 2 tablespoons of olive oil
- 1 teaspoon of thyme
- 1 glass of white wine (optional)
- Salt and pepper, to taste

Preparing the ingredients:

1. Starting with the beans: The night before, soak the black beans in water to hydrate them. This step is essential to reduce cooking time and achieve a perfect texture.

2. Preparing the vegetables: On the cooking day, chop the onion into quarters, the bell pepper into large pieces, and the carrots and parsnip into large chunks. These vegetables will add flavor to the broth but will be removed before adding the rice. The zucchini will be diced.

3. Boiling the beans: Place the soaked beans in a large pot with water. Add the chopped onion, bell pepper, carrot, and parsnip. Season with salt and thyme, then let it boil for 45-50 minutes. Ensure that the beans are not overcooked, but remain whole.

Preparing the rice:

4. Washing the rice: Rinse the rice well under cold running water to remove excess starch. This will help avoid a sticky texture.

5. Sautéing the vegetables: In a large skillet, add the butter cube and olive oil. Once the butter has melted, add the chopped onion, bell pepper, carrot, parsnip, and zucchini. Sauté the vegetables for 5-7 minutes until they become slightly soft.

6. Adding the rice: After the vegetables have softened, remove them from the skillet and keep the liquid. In the remaining liquid, add the washed rice and let it boil for 20-25 minutes. If the liquid is not enough, add a cup of warm water and a Knorr soup cube for extra flavor if desired.

7. Finishing the rice: Five minutes before removing the rice from heat, add the glass of white wine to enhance the flavor.

Assembling Gallo Pinto:

8. Combining the ingredients: Preheat the oven to 180°C. In a baking dish, add a little olive oil, then add the cooked rice and drained beans. Mix well and leave in the oven for 5-7 minutes to blend the flavors.

Serving:

Gallo Pinto is served hot, at breakfast, alongside fried eggs or an omelet, sour cream, fried bananas, and optionally, chicken breast. It is a dish that is present at every Costa Rican meal, and the combination of textures and flavors will delight any food lover.

Suggestions and variations:

- You can add fresh herbs like parsley or cilantro for an extra touch of freshness.
- If you want a vegan version, you can omit the wine and sour cream.
- Another delicious variation is to add a few slices of fresh avocado alongside Gallo Pinto for a creamy texture and a hint of freshness.

I invite you to try this simple recipe and enjoy the authentic taste of Costa Rica! Enjoy your meal!
