Cheese Quiche
The dough is the perfect base for any delicious tart, and making it is not complicated at all. In a generous bowl, we put the cold butter, cut into small cubes, which will give the dough a flaky texture. We then add the salt and flour, gently mixing the ingredients with our fingers, so that we achieve a sandy texture. This step is essential to ensure a crispy base. Once the dough has reached the desired consistency, we begin to add cold water, one tablespoon at a time, until the dough starts to come together and becomes pliable. We form a ball from the dough and wrap it well in cling film to protect it from the air. We let it rest in the fridge, where it will develop a more intense flavor.
Meanwhile, we take care of the filling. In another bowl, we put the cottage cheese, which we crumble with our hands, making sure there are no large pieces left. We add the cheese and sheep's cheese, both grated on a fine grater, so they integrate perfectly into the mixture. We mix well with a spoon, and then incorporate the sour cream and eggs, which will add creaminess to the filling. The red pepper, cut into small cubes, will bring a splash of color and a fresh aroma, so we add it to the mixture. We don’t forget the corn kernels, which will offer a pleasant contrast, and the chopped fresh dill, which will enhance the flavor. We season with salt and pepper to taste, being careful not to overdo it.
We prepare the tart pan by lining it with parchment paper to prevent sticking. We take the dough out of the fridge and, using a rolling pin, roll it out evenly to fit the size of the pan. We place the dough in the pan, making sure to leave a little over the edges. The excess dough is trimmed with a knife, and then we pour in the prepared filling, leveling it with a spatula. On top, we add halved cherry tomatoes, which will provide an attractive appearance and a note of freshness.
Once everything is prepared, we place the pan in the preheated oven at a moderate temperature and let the tart bake for 50-60 minutes. When we see that the tart has taken on a golden crust, we know it is ready. We take it out of the oven and let it cool slightly before slicing and serving. The flavors will combine perfectly, and each slice will bring an explosion of tastes. Enjoy your meal!
