- 20 g fresh yeast
- 30 ml extra virgin olive oil
- 75 ml warm water (or milk, for a richer taste)
- 1 teaspoon sugar (to activate the yeast)
- 1/2 teaspoon salt

Ingredients for the filling:
The filling can vary according to your preferences. Here are some suggestions:
- Cheese (burduf)
- Grated telemea cheese mixed with an egg
- Finely chopped chicken ham
- Sautéed mushrooms
- Mixed vegetables (bell peppers, olives, onion)

Preparation:
1. Preparing the starter: In a small bowl, dissolve the fresh yeast along with the teaspoon of sugar in 75 ml of warm water (or milk). Let the mixture sit for 5-10 minutes until it becomes frothy. This is the crucial step to activate the yeast.

2. Sifting the flour: In a large bowl, sift the flour and add the salt. Make a well in the middle of the flour, where you will pour the olive oil and the yeast starter.

3. Forming the dough: Begin incorporating the flour with the oil and starter using a spatula or your hands. Gradually add water (or milk) until you obtain a homogeneous and easy-to-shape dough. If necessary, you can add a little extra flour, but be careful not to overdo it.

4. Let the dough rise: Cover the bowl with a clean towel and let the dough rise in a warm place for about 20 minutes, or until it doubles in volume.

5. Shaping the rolls: Once the dough has risen, divide it into 12 equal portions. Roll each piece into a circle and add the chosen filling in the center. Pinch the edges to form a pouch, making sure the filling is well sealed.
