Ingredients

Sponge:
- 3 eggs
- A pinch of salt
- 150 g sugar
- 1 packet of vanilla sugar
- 120 g flour
- 120 g starch
- 9 tablespoons of whole milk (preferably warm)
- 1½ teaspoons baking powder
- 60 g cocoa powder
- 1 tablespoon ground nuts (optional, for a distinct flavor)

Cream:
- 1 packet of gelatin (10 g)
- 250 g mascarpone
- 200 g whipped cream
- 1 tablespoon sugar
- 1 tablespoon dandelion honey
- 75 g sour cream
- Fruits from a mixed compote (e.g., peaches, pears, and cherries)

Step-by-Step Preparation

1. Preparing the Sponge
We start by preparing the sponge. In a bowl, combine the flour, starch, cocoa powder, and baking powder. Make sure the ingredients are well mixed to avoid lumps.

In another bowl, beat the egg whites with a pinch of salt until they form a foam. Gradually add 50 g of sugar and continue to beat until you achieve a firm meringue.

In a separate bowl, whisk the egg yolks with the remaining sugar, vanilla sugar, and the 9 tablespoons of warm milk. The mixture should become creamy and homogeneous.

Considering the fine texture we want to achieve, we begin to incorporate the flour mixture into the egg yolk cream. Mix with a spatula, being careful not to lose the air from the egg whites. Once we obtain a homogeneous mixture, we add the meringue and gently mix through up-and-down motions.

Pour the mixture into a flour-lined baking tray and bake in a preheated oven at 180°C for 30 minutes. Check with a toothpick if the sponge is baked: if it comes out clean, then it is ready. After baking, remove the sponge from the oven and let it cool on a rack.

2. Preparing the Cream
For the mascarpone cream, we start by hydrating the gelatin in cold water for 10 minutes. It is essential to follow this step to achieve a cream with a perfect texture.

Meanwhile, in a bowl, mix the mascarpone with sugar and honey. After the gelatin has hydrated, gently heat it until it completely dissolves, then add 2-3 tablespoons of the mascarpone cream to the melted gelatin. Mix well to unify the composition, then pour the gelatin into the mascarpone cream and mix again.

Separately, whip the cream until it becomes firm. Fold the whipped cream into the mascarpone cream, being careful to keep the air in the cream to achieve a fluffy texture. Finally, add the sour cream and mix gently.

3. Assembling the Cake
Once the sponge has completely cooled, cut it into 3 equal layers. Place the first layer on a platter and soak it with the juice from the fruit compote. Add a layer of mascarpone cream, followed by a layer of fruits from the compote. Continue with the second layer of sponge, soaking it again, adding cream and fruits, and finally place the last layer.

After finishing the assembly, spread butter over the top and sides of the cake to help the fondant adhere better. Cover the cake with fondant, giving it an elegant appearance.

Serving Suggestions
The Cinderella Cake can be decorated with edible flowers or fresh fruits for a stunning visual effect. It is best served alongside a cup of aromatic tea or fresh lemonade, which complements the sweetness of the cake.
