To prepare these delicious cookies, we start by making a quick dough that will serve as the base of our recipe. In a large bowl, we combine all the necessary ingredients for the dough, including flour, butter, the whole egg, sugar, and a pinch of salt. We knead the mixture well until we obtain a smooth and elastic dough. Once the dough is ready, we wrap it in plastic wrap and let it chill in the refrigerator for about 30 minutes, so that it firms up and becomes easier to handle.

In the meantime, we can prepare the filling. We take the four egg yolks and whisk them well with the sugar until the mixture becomes frothy and light in color. This is an essential step, as the incorporated air will contribute to a fluffy texture of the cookies. Meanwhile, we grind the nuts in a blender or a grinder, being careful not to turn them into a paste. We soak the raisins in cognac to give them an intense and aromatic flavor. Additionally, we grate the zest of a fresh lemon, which will add a note of freshness and an irresistible aroma.

After the dough has firmed up, we take it out of the refrigerator and divide it into two equal parts. On a floured surface, we roll out each part into a thin sheet, about 0.5 cm thick. These sheets need to be uniform to ensure even baking. We preheat the oven to 180 degrees Celsius and bake the two sheets for about 10 minutes, or until they are lightly browned, but must remain yellow to maintain the desired texture.

Once the sheets are baked, we let them cool slightly, then we spread the first sheet with apricot jam, which will add a sweet-sour contrast. We place the second sheet on top and carefully spread the previously made egg yolk foam over its surface. On top of the egg yolk foam, we sprinkle the ground nuts, the raisins drained of excess cognac, and the grated lemon zest. This mixture will provide an explosion of flavors and textures.

We reintroduce the cake into the oven, but at a very low heat, to allow the topping to firm up without burning. We leave it in the oven until the foam becomes firm and slightly browned. Once the cookies are ready, we let them cool completely before cutting them into portions. These mini cookies are perfect to be served alongside a cup of warm milk every morning or as a treat at five o’clock. Enjoy!
