Stuffed Roasted Peppers
To prepare these delicious stuffed peppers, we start with preparing the peppers. So, we grill them or bake them until the skin becomes slightly charred and the aroma becomes intense. After they have cooled a bit, we put them in a pot, covering them to retain moisture. Now we can take care of the tasty filling.
We carefully peel the onion and carrots, removing the skin. We finely chop the onion so that it incorporates well into the filling, and we grate the carrots on a small grater to release their sweetness. In a pan, we add a little oil and sauté the onion and carrots together, stirring constantly so that they do not stick to the bottom. When the onion becomes translucent, we add the washed rice, mixing well to coat it evenly with the flavored oil.
Once the mixture becomes homogeneous, we add the spices: salt, pepper, and Delikat. We continue to stir, then add two cups of water and let it boil over medium heat. The rice should be cooked only halfway, so we are careful not to leave it on the heat for too long. After it has boiled, we add a tablespoon of broth, mixing well to combine the flavors. When all the ingredients are well incorporated, we add the chopped parsley, which will add a fresh and fragrant note to the filling.
Now we return to the previously prepared peppers. We carefully clean them, removing the stem and seeds, making sure they remain whole. With a sharp knife, we precisely cut the stems. We begin to fill the peppers with the rice and meat mixture, being careful not to overfill them, so the filling does not spill out during cooking. On top, we add a tablespoon of broth, which will provide a special flavor and help form a delicious crust.
In a pot, we put a tablespoon of broth at the bottom, then place the peppers upright so that they cook evenly. If we have kept the juice from the cleaned peppers, we add it to the pot for extra flavor. We cover everything with water, so the peppers are well covered, and we put the pot on medium heat. We let it boil for 10-15 minutes until the peppers become tender and the aroma spreads throughout the room. They are served warm, alongside a slice of fresh bread, to savor every drop of delicious sauce. These stuffed peppers are not only a hearty meal but also a true culinary delight, perfect for family meals or special occasions.
