Brazilian Chicken Salad

Ingredients: Ingredients for two servings*: boiled chicken meat (the upper part from 2 thighs or one chicken breast) boiled peas (half a small can) boiled corn (half a small can) 1 tablespoon of raisins 2 tablespoons of pitted olives, chopped finely 2 peeled and grated carrots (I cut them into sticks) 1 peeled apple, cored and cut into small cubes or grated Mayonnaise: 1 yolk, salt, mustard, oil as needed Garnish: 2 medium potatoes, salt, and oil for frying

To prepare a delicious and comforting salad that perfectly combines flavors and textures, we start with the essential ingredients. In the first step, carefully peel the potatoes, then slice them thinly, as for French fries. This is a crucial step, as the uniform thickness of the slices will ensure even frying and a crispy texture. Once sliced, wash them well in cold water to remove excess starch, which will help achieve perfectly crispy fries. After washing, drain them and dry them with a clean towel to prevent splattering hot oil during frying.

Heat the oil in a deep pan, making sure it is hot enough before adding the potatoes. Once the oil is ready, fry the potatoes in batches so as not to overcrowd the pan. This will allow each slice to fry evenly, becoming golden and crispy. When they are ready, remove them with a spatula and place them on paper towels to drain excess oil. As soon as they have drained, sprinkle salt over them to enhance the flavor.

In a large bowl, combine the chicken meat, which you can tear into pieces or cut into cubes, depending on your preference. You can use boiled or roasted chicken to add extra flavor. If desired, you can also add finely chopped onion for a more intense taste and pleasant aroma. Mix the meat well with the other ingredients, which may include fresh vegetables, mayonnaise, and spices to taste. Finally, add the mayonnaise, mixing carefully to combine all the ingredients without crushing them.

Serve the salad on a platter or in individual plates, beautifully arranging the mixture of meat and vegetables. On top, generously add the fried potatoes, which will bring a crispy contrast to the soft texture of the salad. This combination of ingredients will create a savory dish, perfect for a family meal or a gathering with friends. Enjoy every bite and savor the perfectly blended flavors!
