Strawberry Yogurt Muffins

To prepare these delicious muffins, we will start by preparing the necessary ingredients. In a large bowl, we add the sifted flour along with the baking powder. It is important to sift the flour to avoid lumps and to ensure a fine texture of the muffins. We mix the dry ingredients well with a spatula or a whisk, so that the baking powder is evenly distributed in the flour.

In another bowl, we will combine the wet ingredients. We add the yogurt, which will provide the muffins with pleasant moisture and a creamy taste. The melted butter, which should be at room temperature, is then added and mixed well with the yogurt. We continue by adding the sugar, which will sweeten the mixture, and the beaten eggs. It is recommended to use fresh eggs, as they contribute to the rising and aeration of the dough. We mix all the wet ingredients until we obtain a homogeneous mixture.

After finishing the wet mixture, we come in with the dry ingredients. We carefully pour the flour mixed with baking powder over the wet mixture and, using a spatula, we start to gently mix. It is essential not to overmix, as the muffins could become dense; we need to stop when the ingredients are well incorporated but not completely homogeneous.

Now, we are ready to bake the muffins. We take the special muffin tray and place a paper liner in each cup. These liners not only help us remove the muffins more easily but also give them a nice presentation. We fill each cup with batter, being careful to leave about 1/3 of the cup empty to allow the muffins to rise during baking.

The muffin tray is placed in the preheated oven at 180 degrees Celsius. Baking will take about 20-25 minutes, but it is advisable to check the muffins from time to time. When they become golden and pass the toothpick test (which should come out clean), we can take them out of the oven. After letting them cool in the tray for a few minutes, we can transfer them to a rack to cool completely.

Cold, these muffins are absolutely delicious and can be served plain, or alongside a fruit sauce, chocolate glaze, or even with a generous portion of cream cheese. Enjoy!
