To prepare a delicious stew, start by thoroughly washing the meat, choosing beef or pork depending on your preference. Cut the meat into small, uniform pieces so that it cooks evenly. In a large skillet, add a little oil, and when it is hot, add the meat and sprinkle with salt and pepper to taste. Sauté the meat, stirring occasionally, until it is browned on the outside, which will add a special flavor to the dish.

Once the meat is browned, add a cup of water and cover the skillet with a lid. Let the meat simmer on low heat so that it gradually becomes tender. It is important to occasionally check the water level, adding a cup of water when it decreases. This process may take about 30 minutes, but it is essential to achieve tender and juicy meat.

While the meat is simmering, prepare the vegetables. Slice the onion into thin scales, and the leek into rounds. The carrot, peeled and washed, is also cut into rounds. Add the sliced vegetables to the skillet over the meat and sauté them lightly, stirring to combine the flavors. After a few minutes, add water so that the vegetables are covered, and let everything simmer for 10 minutes.

Once the vegetables have started to soften, it’s time to add the potatoes, diced into small cubes. Make sure they are of similar size to cook evenly. When the potatoes are almost cooked, add the diced tomatoes and broth, stirring well. Let the stew simmer until the sauce thickens and reduces, being careful not to add flour to maintain the natural consistency of the sauce.

When all the ingredients are cooked and the flavors have harmonized, turn off the heat and add finely chopped herbs, which will provide an extra freshness and color to the dish. This can include parsley, dill, or other favorite herbs.

Serve this delicious stew alongside homemade flatbreads, which will perfectly complement this rustic dish.
