We start this delicious recipe with an essential ingredient: butter. So, first, we take a large bowl and add the softened butter, which should be at room temperature for easier mixing. We add granulated sugar and vanilla sugar over it. Using a mixer, we begin to mix at medium speed until the mixture becomes creamy and smooth, having an airy and pleasant texture. It is important that this step is done carefully, as a well-made emulsion will influence the final texture of the cookies.

In another bowl, we crack the eggs and mix them at high speed for about 15 minutes. This process is crucial, as the air incorporated into the eggs will help the cookies to be fluffy and rise nicely during baking. Don’t forget to add a pinch of salt, which will enhance the flavors and balance the sweetness. Once the eggs have been properly mixed, we carefully incorporate them into the butter and sugar mixture, gently folding with a spatula until a homogeneous composition is achieved.

Now, we move on to the stage where we add the flour. It is advisable to sift it "in the rain," meaning to add it gradually while continuously mixing to avoid lumps. This technique will ensure a fine and even texture of the dough. Once all the flour has been integrated, our dough is almost ready.

We prepare a large baking tray, lining it with parchment paper, making sure it is well covered to prevent the cookies from sticking. Using a piping bag, we form portions of dough about 10 cm long, placing them carefully on the tray, leaving enough space between them as they will spread during baking.

We preheat the oven to 180 degrees Celsius and place the tray with cookies inside. They bake for 7 to 10 minutes, or until the edges become golden and nicely browned. It is important to keep an eye on them, as the baking time may vary depending on the oven. Once the cookies are ready, we let them cool slightly on a rack.

For an extra touch of elegance, we can decorate the cookies with melted chocolate, which we prepare in a bain-marie. This final touch will turn our cookies into a truly special dessert, perfect to be enjoyed alongside a cup of tea or coffee. Enjoy every bite!
