This strawberry and cheese tart is a perfect blend of textures and flavors, bringing a touch of freshness to any meal. Whether it's a special occasion or simply a relaxing evening at home, this recipe is simple yet impressive.
Preparation time: 30 minutes
Baking time: 60 minutes
Total time: 90 minutes
Number of servings: 8
Necessary ingredients:
For the tart base:
- 200 g plain biscuits (you can use digestive or vanilla biscuits)
- 125 g unsalted butter, melted
For the filling:
- 2 large eggs
- 75 g sugar
- 250 g feta cheese or unsalted cottage cheese
- Grated zest of one lemon (about 1 tablespoon)
For the strawberry cream:
- 500 g fresh strawberries
- 100 g sugar
- 1 packet of berry gelatin
- 2 heaping tablespoons of cornstarch
- 1/2 cup milk
- 1/2 lemon - juice (optional for a tangy taste)
Preparing the Tart:
1. Preparing the pan:
Start by preheating the oven to 180 degrees Celsius. Choose a round pan with a diameter of 20 cm. Line the bottom and sides of the pan with aluminum foil, then grease it with melted butter. This will prevent the tart from sticking and make it easier to remove.
2. Preparing the base:
In a large bowl, crush the biscuits to a fine texture using a food processor or by placing them in a plastic bag and crushing them with a rolling pin. Add the melted butter and mix well until the biscuits are fully incorporated. Press the mixture into the pan to form an even base. Cover with plastic wrap and refrigerate for 1 hour.
3. Preparing the filling:
In another bowl, beat the eggs with the sugar until creamy and fluffy. Add the feta cheese and lemon zest, continuing to mix until you achieve a homogeneous composition.
4. Baking:
After the base has been in the refrigerator, remove the pan and pour the cheese filling over the biscuits. Place the pan in the preheated oven and bake for about 60 minutes or until the cheese is firm and lightly browned. When done, let the tart cool with the oven door slightly ajar to prevent cracking.
5. Preparing the strawberry cream:
While the tart is cooling, wash the strawberries well, cut them in halves or slices, depending on your preference. Place them in a saucepan with 100 g sugar and cook over medium heat for 15 minutes. This process will release the juice from the strawberries and create a sweet mixture.
6. Thickening the cream:
In a glass, mix the milk with the 2 tablespoons of cornstarch until completely dissolved. Add this mixture to the cooked strawberries and mix well. Continue to cook for another 3-4 minutes, stirring constantly, until the mixture thickens.
7. Assembling the tart:
After the strawberry cream has cooled slightly, pour it evenly over the cooled tart. Allow the tart to cool completely at room temperature, then refrigerate for 2-3 hours.
8. Preparing the gelatin:
Follow the instructions on the berry gelatin package. When ready, pour the gelatin over the cooled tart, ensuring it is not completely set, for perfect blending.
9. Serving:
The strawberry cheese tart is now ready to be served! You can decorate it with whole strawberries or fresh mint leaves for an elegant appearance. Cut into slices and enjoy every bite!
Useful tips:
- Use fresh, ripe strawberries for an intense flavor. If you can’t find strawberries, you can experiment with other berries like raspberries or blackberries.
- For an extra flavor boost, you can add a few drops of vanilla extract to the cheese filling.
- If you want to reduce the calorie count, you can replace the sugar with a natural sweetener.
Nutritional benefits:
This tart is not only delicious but also packed with nutrients. Strawberries are an excellent source of antioxidants, vitamin C, and fiber, making them beneficial for the immune system and digestion. Feta cheese provides protein and calcium, essential for bone health.
Frequently asked questions:

Ingredients: This recipe is modified by me. I was inspired by a cookbook. I started to make a different tart than this and here is what came out. The recipe called for: 200 g plain biscuits, 125 g melted butter, 2 eggs, 75 g sugar, 250 g feta cheese or unsalted cheese, 250 g melted cheese, 1 tablespoon of orange zest, 2 tablespoons of orange juice. I used all of these except for the orange zest, juice, and melted cheese. Additionally, I used: 500 g strawberries, 100 g sugar, 1 packet of forest fruit gelatin, 2 heaping tablespoons of cornstarch, 1/2 glass of milk, 1 lemon zest.
