Potato Salad III
To prepare a delicious and nutritious potato salad with vegetables, we start by preparing the basic ingredients. The potatoes are carefully selected, preferably from a variety that holds up well when boiled, such as new potatoes or those meant for salads. We wash them well under a stream of cold water to remove any impurities, then we boil them in salted water, leaving them to cook in their skins until they become soft but not overly so, so they do not crumble.
Once they are boiled, we take them out of the water and let them cool slightly. Once cooled, we peel them with a sharp knife and cut them into cubes of about 1 cm on each side, ensuring uniformity. In a large bowl, we add the potato cubes and season with salt and ground white pepper to taste, to give a savory start to the salad.
We continue by preparing the other ingredients. We take olives, preferably choosing green or black ones depending on preference, and remove the pits. After cleaning them, we chop them not too finely to maintain a crunchy texture. Cucumbers, ideally one that is crunchy and juicy, are wiped of excess brine and sliced thinly to add a fresh note to the salad.
The onion is peeled and cut into thin rings, bringing a slightly spicy taste and specific aroma. Roasted peppers, which can be canned or homemade, are cut into cubes of 1 cm on each side, adding a touch of sweetness and vibrant color to the salad. All these ingredients are carefully mixed in the bowl with potatoes, taking care not to crush them.
To bind all the ingredients, we prepare a creamy dressing from mayonnaise mixed with sour cream. This mixture will add a velvety texture and rich flavor. We pour the dressing over the salad and mix gently so that all ingredients are evenly coated. It is also important to ensure that the salad is properly salted, adjusting the taste to preference. Finally, the salad can be served immediately or left in the fridge to let the flavors combine. This potato salad is perfect as a side dish or as a main course, being a versatile dish that satisfies any taste.
Ingredients: 1 kg of boiled potatoes with skin, 200 g of black olives, 3-4 cucumbers (in vinegar), 3-4 roasted peppers (or pickled peppers), 1 red onion, mayonnaise made from 3 egg yolks, a cup of sour cream, salt, ground white pepper.
