Necessary Ingredients:
*For the Dough:*
- 1200 g flour
- 4 eggs + 1 egg for brushing
- 500 ml warm milk
- 100 g melted butter
- 120 g sugar
- Zest of one lemon
- Zest of one orange
- 20 g dry yeast (or 2 cubes of fresh yeast)
- 30 g vanilla sugar
- A pinch of salt
*For the Filling:*
- 600 g ground walnuts
- 100 g powdered sugar
- 150 ml milk
*For Decoration:*
- 300 g honey
- 200 g ground walnuts
- Cinnamon to taste
Step by Step for a Perfect Result:
1. Activating the Yeast: In a bowl, add the dry yeast, vanilla sugar, and half of the warm milk. Gently mix and let the yeast activate for about 15 minutes. This step is essential for achieving a fluffy and airy dough.
2. Preparing the Dough: In a large bowl, sift the flour and add the activated yeast. Make a well in the center and add the eggs, cooled melted butter, sugar, lemon and orange zest, and salt. Start kneading the dough, gradually adding the warm milk. It’s important not to add all the milk at once, as the required amount may vary depending on the type of flour used.
3. Kneading: Transfer the dough to a work surface and knead for 10-15 minutes until it becomes smooth, elastic, and non-sticky. A good technique is to use your palms to press the dough and then twist it. This will help develop the gluten.
4. First Rising: Place the dough in a bowl greased with oil, turning it to coat all sides. Cover it with plastic wrap and let it rise in a warm place for 40-50 minutes or until it doubles in size.
5. Preparing the Filling: In another bowl, combine the ground walnuts with the powdered sugar. Gradually add the milk, mixing until you achieve a dense mixture. If you prefer a moister filling, feel free to add a little more milk.
6. Shaping the Mucenici: Once the dough has risen, transfer it to a work surface and gently flatten it. Cut it into 16 equal pieces (you can use a scale for precision). Shape each piece into a ball and cover them with plastic wrap to prevent drying out.
7. Shaping: Take a ball of dough, roll it into a log, and then flatten it with a rolling pin. Place the walnut filling along the edge of the dough in an even layer, then carefully roll the dough. Joining the ends of the roll to form a ring will give mucenici their characteristic shape.
8. Placing in the Baking Tray: Shape each mucenic into a figure-eight and place them on a baking tray lined with parchment paper. Let them rise for another 15 minutes to achieve an airy texture.
9. Baking: Preheat the oven to 180°C (medium). Brush the mucenici with beaten egg to obtain a golden crust. Bake for about 20 minutes or until they turn golden.
10. Decorating: Once they have cooled slightly, brush the mucenici with a mixture of honey and cinnamon and sprinkle ground walnuts on top. This detail will add extra flavor and make the dessert look even more appetizing.
Helpful Tips and Variations:
- If you prefer sweeter mucenici, you can soak them after baking. For a delicious syrup, boil 300 ml of water with 150 g of sugar, lemon and orange zest, and a vanilla pod.
- Try adding a splash of rum or vanilla extract to the filling for a more complex flavor.
- Mucenici can be served alongside a cup of tea or coffee, making them a perfect dessert for a gathering with friends or a special celebration.
