Nut Foam Crescents – a quick and delicious dessert

If you're looking for a simple and tasty recipe to impress your family and friends, nut foam crescents are the perfect choice! These aromatic delights, filled with a fine nut foam, are ideal for any occasion. Here's how you can prepare them step by step.

Preparation time: 30 minutes
Baking time: 25-30 minutes
Total time: 1 hour
Number of servings: 30 crescents

Ingredients:
- 600 g flour
- 200 ml butter (or margarine)
- 2 eggs
- 10 g fresh yeast
- 250 ml lukewarm milk
- 150 g ground nuts
- 3-4 tablespoons sugar (adjust to taste)
- 1 pinch of salt
- 1 packet of vanilla sugar
- Zest of 1 lemon
- Zest of 1 orange

Preparation:

1. Activating the yeast: Start by activating the yeast. In a small bowl, add the 10 g of yeast to the lukewarm milk (not hot) and 1 teaspoon of sugar. Stir gently and let sit for 10-15 minutes until a foam forms on the surface. This is a crucial step for fluffy crescents.

2. Preparing the dough: In a large bowl, combine the flour with the softened butter, egg yolks, remaining milk, lemon and orange zest, a pinch of salt, and sugar. Add the activated yeast and knead the dough well for about 10 minutes until it becomes elastic and smooth. Cover it with a clean towel and let it rest for 30 minutes in a warm place.

3. Preparing the filling: In a pot, add 250 ml of milk, ground nuts, vanilla sugar, and, if desired, another tablespoon of sugar for a sweeter taste. Simmer the mixture over low heat, stirring constantly, for 5-7 minutes until the mixture becomes a consistent foam. Let it cool slightly, then fold in the beaten egg whites. This will add a light and airy texture to the filling.

4. Shaping the crescents: Once the dough has risen, divide it into small balls of about 30 g each. On a floured surface, roll each ball into an oval shape. Add a teaspoon of the nut filling in the center and roll the dough, bending the edges to form the crescents. Make sure they are well sealed to prevent opening during baking.

5. Baking: Place the crescents on an ungreased baking tray, leaving space between them to expand. Bake in a preheated oven at 200°C for 25-30 minutes or until golden. It is essential not to overbake them to maintain a fluffy texture.

6. Finishing: After removing them from the oven, let the crescents cool slightly but not completely. Then, dust them with powdered sugar, being careful not to cover them when they are too hot, as the sugar will melt and stick excessively.

Serving suggestion: These nut foam crescents are perfect to be served with a fragrant coffee or a fruit tea. You can add a splash of rum essence to the filling for an even more intense flavor or try filling them with other nuts, such as almonds or hazelnuts, to vary the taste.

Enjoy this simple and delicious recipe for nut foam crescents! They will surely become a family favorite.
