Meatball soup with potatoes
Meatball soup is a traditional Romanian dish, savory and comforting, perfect for cool days. To prepare this delicacy, we start by preparing the vegetables. We take the red and yellow bell peppers, carefully remove the seeds, and then cut them into small cubes, mixing the colors to achieve an attractive appearance. We continue with the carrot, which we peel and grate on a large grater, so that it integrates perfectly into the soup. We slice the green onion into thin rounds, and chop the parsley finely, getting ready to bring flavor and freshness to the dish.
In a large pot, we add about 4 liters of water and put it on medium heat, adding the previously prepared vegetables. We let it boil for 10 minutes, so that the flavors combine. Meanwhile, we peel the potatoes, cutting them into suitable cubes, and chop the tomatoes finely. After the 10 minutes of boiling, we add the potatoes and tomatoes to the pot to continue the cooking process. We taste the soup and add salt and pepper to taste, ensuring that each ingredient contributes to the flavor.
Now we take care of the meatballs. We clean the onion and chop it very finely, so that we do not feel those large pieces in the dish. We finely chop the greens, and in a large bowl, we mix the minced meat with the egg, onion, greens, salt, and pepper. It is essential to mix the ingredients well to obtain a uniform composition. We wet our hands to prevent sticking and start forming the meatballs, taking from the meat mixture and shaping them in our palms.
After the potatoes have boiled for about 15 minutes, we reduce the heat to low and carefully add the meatballs to the pot. We create a constant and even cooking environment, then adjust the heat to ensure that the meatballs are cooked properly. It is important to taste them from time to time, to check if they are cooked and to add borscht, to taste, according to everyone’s preferences.
We let the soup boil a few times, adding sour cream for extra creaminess and a richer taste. We let it cook for another minute, then take the soup off the heat. Finally, we sprinkle a little chopped green parsley on top, which will add a touch of freshness and a pleasant appearance to the dish. Serve the meatball soup hot, alongside a slice of fresh bread, and enjoy the authentic flavors of this delicious dish! Bon appétit!
Ingredients: 1/2 yellow bell pepper, 1/2 red bell pepper, 2 medium tomatoes, peeled, 1 carrot, 1 green onion, 1/2 bunch of fresh parsley, 2 medium potatoes, salt, pepper, sour for souring, 4 tablespoons of sour cream. For meatballs: 400 g minced meat mix (beef and pork), 1 small onion, 1 egg, salt, pepper, 4 sprigs of fresh dill, 3 sprigs of fresh parsley.
