If you want to impress your family with a hearty and flavorful meal, the rabbit on a bed of potatoes recipe is the perfect choice. This traditional dish not only spreads an inviting aroma but also has a beautiful story behind it. Cooking rabbit has always been a family activity, bringing generations together around the table.
Ingredients:
- 1 domestic rabbit (approximately 1.5 kg)
- 500 g chicken liver
- 2 eggs
- 2 slices of bread
- 1 large onion
- 2 green garlic stalks
- A bunch of fresh parsley
- 6 cloves of garlic
- 100 ml red wine
- Spices to taste (salt, pepper, paprika)
- 50 ml olive oil
- 5 medium potatoes, peeled
Preparation:
1. Marinating the rabbit: The night before cooking, prepare a mixture of red wine and your preferred spices. Place the rabbit in a dish, pour the marinade over it, and let it chill, covered, to tenderize and absorb the flavors. The red wine will not only soften the meat but also give it a special taste.
2. Preparing the filling: On the cooking day, start by boiling the chicken liver in salted water for about 10 minutes. Once cooled, mash it with a fork. In a pan, add oil and sauté the finely chopped onion until translucent. Add the finely chopped green garlic and sauté for another 1-2 minutes.
3. Combining the ingredients: In a large bowl, combine the mashed liver, sautéed onion, eggs, finely chopped parsley, and the soaked and well-drained bread. Mix well until you obtain a homogeneous mixture. This filling will add a rich flavor and pleasant texture to the rabbit.
4. Stuffing and sewing the rabbit: Carefully fill the rabbit with the mixture, being careful not to overstuff it. Sew the opening with kitchen twine to prevent the filling from leaking during baking.
5. Preparing the potatoes: Peel the potatoes and slice them thinly. They will form a delicious bed for the rabbit, providing a crispy texture. Season them with salt, pepper, and a little olive oil.
6. Baking: Preheat the oven to 180°C. Place the rabbit in a greased baking dish and put it in the oven for about 20 minutes, facing up. After this time, carefully turn it over. Then, add the seasoned potatoes around the rabbit.
7. Final cooking: Make a few cuts in the meat to allow the flavors to penetrate. Add the whole garlic cloves to the dish. Cover with aluminum foil and bake for 30 minutes. After that, remove the foil and bake for another 30 minutes until the rabbit is golden brown and the potatoes are crispy.
8. Serving: Once the rabbit is well browned, take the dish out of the oven and let it rest for a few minutes before slicing. Serve with a fresh green salad or steamed vegetables for a balanced meal.
Helpful tips:
- Choose a domestic rabbit, which has more tender and juicier meat compared to commercial ones.
- If you want an even more intense flavor, add a few juniper berries to the marinade.
- You can replace the potatoes with other vegetables, such as carrots or zucchini, to diversify the side dish.
- Try using leftover meat to prepare a delicious sauce or pie.
