The History of Polenta Cheese Balls
Polenta cheese balls are a traditional dish often associated with festive meals in communities that value tradition and authentic taste. Although it is a simple recipe, each family has its own version, adapted to their tastes and available ingredients. Today, I will present my favorite way to prepare this dish, using burduf cheese that I brought from the Cheese Festival.

Preparing the Polenta
1. Start by placing 1 liter of water in a large pot. Add 10 g of salt and bring the water to a boil over medium heat.
2. When the water begins to boil, gradually add the cornmeal, whisking constantly to avoid lumps. It is essential to stir continuously, as the polenta becomes creamier and smoother.
3. After adding all the cornmeal, reduce the heat and let it simmer for about 15 minutes, stirring occasionally.

Forming the Cheese Balls
4. After 15 minutes, remove the pot from the heat and pour the polenta onto a platter. Let it cool slightly, then divide the polenta into four equal portions.
5. Start forming the balls: take one portion of polenta and spread it in the center, adding 80 g of burduf cheese. Heat the cheese well so that it melts slightly inside the ball.
6. After filling each portion with cheese, form a compact ball, ensuring the cheese is well wrapped in the polenta.

Baking in the Oven
7. Wrap each ball in aluminum foil, making sure they are well sealed to prevent drying out.
8. Preheat the oven to 180°C and place the balls on a baking tray. Let them bake for 30 minutes until they become golden and the burduf cheese inside is well melted.

Serving
9. Remove the balls from the oven and let them cool slightly. You can serve the polenta cheese ball with a drizzle of sour cream on top for added creaminess and flavor!
10. This dish pairs wonderfully with a fresh green salad or a spicy tomato sauce to balance the richness of the cheese.

Practical Tips:
- If you don't have burduf cheese, you can use other strong-flavored cheeses like telemea or goat cheese.
- You can experiment with various herbs by adding them to the polenta for extra flavor.
- If you want an even crispier ball, you can grill it outdoors over coals when the weather allows.

Frequently Asked Questions:
1. Can I make the polenta with sparkling water?
- Yes, using sparkling water can give the polenta a fluffier texture due to the gases dissolved in the water.

2. How can I store leftover balls?
- Leftover balls can be stored in the refrigerator for 2-3 days. You can reheat them in the oven or microwave.

3. Is this recipe suitable for vegans?
- Unfortunately, the recipe contains cheese, but you can try using vegan cheese alternatives.

Nutritional Benefits:
Polenta is an excellent source of complex carbohydrates, providing sustainable energy. Burduf cheese is rich in protein and calcium, essential for bone health. This recipe can be perfect for a weekend meal, offering a delicious combination of flavors and nutrients.

Personalized Version:
To add a unique touch, you can try adding a bit of sour cream or butter to the polenta for an even richer taste. You can also add some fried bacon pieces to the filling for a savory contrast.

Remember, cooking is an art and a pleasure! I encourage you to experiment and put your personal stamp on the recipes. So get ready to enjoy a perfect polenta cheese ball that will impress even the most discerning of your guests! Enjoy your meal!
