Here’s how to make these delicious Urdoaice step by step!

Ingredients

For the dough:
- 1 kg of flour
- 1 cube of fresh yeast
- 7 tablespoons of sugar
- 10 tablespoons of oil (preferably sunflower oil)
- 2 eggs
- 1 teaspoon of salt
- Zest of 1 lemon
- 100 ml of beer
- 300 ml of lukewarm milk

For the filling:
- 700 g of ricotta (or cottage cheese)
- 2 eggs
- A pinch of salt
- 5 tablespoons of sugar
- A large bunch of fresh dill, finely chopped
- 1 egg for brushing

Preparation steps

1. Making the dough:
Start by sifting the flour into a large bowl. This step not only removes any impurities but also aerates the flour, helping to achieve a fluffy dough. Add the sugar, salt, and lemon zest, and mix all the dry ingredients well.

In the center of the flour mixture, make a well and add the beaten eggs. In a separate container, dissolve the yeast in a little lukewarm milk (not hot, to avoid killing the yeast) and let it sit for a few minutes until it becomes frothy.

Add the activated yeast to the center of the flour, along with the oil and beer. Begin mixing with a spatula or your hands, gradually incorporating the flour from the sides. Then, slowly add the lukewarm milk and continue kneading until you obtain an elastic and smooth dough.

Cover the bowl with a clean towel and let the dough rise in a warm, draft-free place for about 1 hour, or until it doubles in size.

2. Preparing the filling:
Meanwhile, prepare the filling. In another bowl, mix the ricotta with the eggs, salt, and sugar until you achieve a smooth mixture. Add the chopped dill and mix well. The dill adds a fresh aroma and distinct flavor to the dish, so don’t skip it!

3. Forming the Urdoaice:
Once the dough has risen, sprinkle a little flour on the work surface and turn out the dough. Roll it out with a rolling pin until you get a sheet about 0.5 cm thick. Cut the sheet into squares of about 10 cm on each side.

On each square, place a tablespoon of the ricotta filling. Lift the corners of the square and bring them together to form a pouch. Make sure the filling doesn’t spill out.

Place the Urdoaice on a baking tray lined with parchment paper, leaving enough space between them to expand during baking. Cover them again with a towel and let them rise for another 30 minutes.

4. Baking the Urdoaice:
Preheat the oven to 180°C. When the Urdoaice have risen, brush each pouch with the beaten egg using a kitchen brush. This step will give them a beautiful golden crust.

Bake the Urdoaice for 30-35 minutes or until they are golden and fluffy. Let them cool slightly before serving.
