Ingredients

- 5 eggs
- 250 g sugar
- 1 packet vanilla sugar
- 1 packet baking powder
- 250 g flour
- 8 tablespoons of oil
For the syrup:
- 3 vials of rum essence
- 1 l of water
- 350 g sugar
- Whipped cream (for decoration)
For the jelly:
- 1 packet raspberry-flavored gelatin
- 50 ml cold water
- 1 teaspoon sugar
Preparation
Step 1: Preparing the savarin sponges
Start by preparing the sponge, which is the base of these delicious savarins. In a bowl, mix the egg yolks with the 8 tablespoons of oil and baking powder. This mixture will add moisture and a rich flavor to your sponges. Separately, beat the egg whites with a whisk or mixer, gradually adding 250 g of sugar until you achieve a stiff and glossy foam. It is important that the egg whites are beaten well to achieve a fluffy texture.
Step 2: Combining the ingredients
Carefully fold the egg yolk mixture into the beaten egg whites using a spatula to avoid losing air from the foam. Add the vanilla sugar and flour, mixing gently until there are no lumps. It is essential to use quality flour to ensure a light and airy sponge.
Step 3: Baking the sponges
Grease and flour the baking tray to prevent the savarins from sticking. Place the baking molds in the center of the tray and fill each mold with 2-3 tablespoons of the mixture. Put the tray in the preheated oven at 180°C and let the savarins bake for 15-20 minutes, or until golden and a skewer inserted in the center comes out clean. Once done, remove the tray and let them cool.
Step 4: Preparing the syrup
While the sponges are cooling, you can prepare the syrup. In a saucepan, combine the water with the sugar and rum essence. Place the saucepan over heat and let the mixture boil, stirring occasionally, until the sugar is completely dissolved. After the syrup has boiled, turn off the heat and let it cool slightly.
Step 5: Soaking the sponges
Once the syrup has cooled, take each savarin and soak it for 1 minute, turning it from side to side. This step is essential to ensure a rich flavor and moisture in your savarins. After soaking, place them on a rack to drain the excess syrup.
Step 6: Preparing the jelly
In a glass, mix the cold water, sugar, and gelatin packet, shaking vigorously for 1 minute. This combination will create a delicious raspberry-flavored jelly that will add a splash of color and flavor to the savarins. Let the jelly rest for a few minutes until it thickens.
Step 7: Assembling the savarins
Cut the tops off each savarin and set them aside. Add 3-4 tablespoons of syrup in the center of each savarin, then decorate with whipped cream using a piping bag. Place the tops back on and carefully add the jelly on each savarin without spreading it.
Step 8: Cooling and serving
Place the savarins in the refrigerator for about 1 hour to allow the jelly to set. Once cooled, they are ready to serve! Savarins are perfect alongside a cup of coffee or a fragrant tea, providing a perfect contrast to the sweetness of the dessert.
Useful tips
- Use fresh eggs, as they will contribute to a better texture of the sponges.
- You can experiment with different syrup flavors, such as vanilla or almond, to add a personal touch.
- If you don’t have raspberry-flavored gelatin, you can use neutral gelatin and add a bit of raspberry puree or other fruits to achieve a similar flavor.
Nutritional benefits
Savarins are a source of energy due to their sugar content, but they also provide protein from the eggs. Moderation in consuming this dessert can bring joy and satisfaction, but it is wise to keep portion sizes in mind given the high caloric content.
