Pineapple slices in citrus syrup
Pineapple slices in citrus syrup
A refined and flavorful dessert, pineapple slices in citrus syrup are a wonderful choice to delight the taste buds of your loved ones. This recipe was inspired by my dear friend Mitinita's invitation to the Sweet Romania challenge, and the result is simply delicious! Let's begin the culinary adventure and discover together how we can transform simple ingredients into something truly special.
Preparation time: 15 minutes
Cooking time: 20 minutes
Total time: 35 minutes
Number of servings: 4-6 servings
Ingredients
- 4 large slices of fresh pineapple
- Juice from 4 large oranges
- Juice from 3 tangerines
- Juice from 2 pomegranates
- 1 large slice of mango
- Zest from one lemon (ideally, use an orange lemon for a more exotic taste)
- 3 star anise flowers
- 1 vanilla bean (or vanilla extract, but preferably a bean)
- 1 cinnamon stick
- 3-5 tablespoons of brown sugar (depending on how sweet you prefer)
Preparation method
1. Prepare the ingredients: Start by peeling and cutting the pineapple slices. Make sure to use a fresh pineapple, as its aroma will make a difference. Also, squeeze the juice from the 4 oranges, 3 tangerines, and the 2 pomegranates. You can use a manual or electric juicer – depending on your preferences.
2. Prepare the citrus syrup: In a large pan (or a thick-bottomed pot), pour the juice obtained from the citrus fruits and bring it to a boil over medium heat. Add the brown sugar and the vanilla bean (which you will split open and scrape the seeds into the syrup). Stir well to dissolve the sugar.
3. Adding flavors: Grate a bit from the slice of mango on a fine grater and add it to the syrup. The mango will add a tropical note and an interesting texture.
4. Cooking the pineapple: Place the pineapple slices in the boiling syrup. Along with the pineapple slices, add the 3 star anise flowers and the cinnamon stick, making sure they stay on top. It is important not to add them from the start into the syrup, as the flavor would become too strong.
5. Boiling the pineapple: Reduce the heat to low and let the pineapple simmer for 15 minutes. During this time, use a spoon to pour syrup from the pan over the pineapple slices, ensuring they soak well.
6. Finishing the dish: After 15 minutes, turn off the heat and cover the pan with a lid. Let it rest for 5 minutes. This step will allow the flavors to develop and blend harmoniously.
7. Adding the orange: While the pineapple is resting, slice an orange. After removing the pineapple from the syrup, add the orange slices to the pan and let them soak in the syrup for 5 minutes, turning them on both sides.
8. Serving: Serve the pineapple slices cold, drizzled with the citrus syrup and garnished with a few star anise flowers and a slice of cinnamon. This dessert is perfect to be enjoyed alongside a scoop of vanilla ice cream or a spoonful of Greek yogurt, which will add a creaminess.
Helpful tips
- Choosing the pineapple: Buy a pineapple that is firm but not too hard. A simple method to check freshness is to try to pull a leaf from the top of the pineapple; if it comes out easily, the pineapple is ripe.
- Sugar: Adjust the amount of sugar according to the sweetness of the fruits. Sometimes, citrus fruits can be more sour, and you may need to add more sugar.
- Variations: You can experiment with other fruits, such as kiwi or peaches, and add flavors like ginger or mint for a fresh note.
Nutritional benefits
Pineapple is an excellent source of vitamin C, which helps strengthen the immune system. Additionally, citrus fruits are rich in antioxidants and low in calories, making this dessert a healthy choice. A serving of pineapple slices in citrus syrup has approximately 150-200 calories, depending on the amount of sugar used.
Frequently asked questions
1. Can I use canned pineapple instead of fresh?
- Of course, but the flavor will not be as intense. Make sure to drain the canned pineapple well to avoid a watery syrup.
2. How can I store leftovers?
- Keep the pineapple slices and syrup in an airtight container in the refrigerator for up to 3 days. Warm gently before serving.
3. What drinks pair well with this dessert?
- A white wine or a citrus cocktail would be perfect. Also, a fresh lemonade or iced tea with mint could complement this dessert very well.
This dessert of pineapple slices in citrus syrup will not only bring a smile to the faces of your loved ones but will also turn any meal into a memorable experience. Enjoy every bite and savor the flavors!
