Antonia Cake
I started making this combination of brownie base with cappuccino cream and blueberry cream about 4 years ago, after I tested it for a baptism cake. I have returned to it for special occasions. Every time I bring it to a larger gathering, I receive positive reactions. Over the weekend, I remade the cake for the baptism of some good friends' daughter. The decoration matched the theme: toys, stars, and little mushrooms from the decor in time, and the tiered assembly keeps the layers organized for a balanced taste.
Quick info
Total time: depends on the size of the cake and decoration, around 5-6 hours (including decoration and cooling)
Servings: for a 3-tier cake, over 30 servings (adjustable by size)
Difficulty: medium – considering the layers and manual decoration
Type: festive tiered cake, suitable for baptisms, anniversaries, large parties
Ingredients
For the layers:
Vanilla base
Cocoa base
Brownie base
For the creams:
Ness cream
Blueberry cream
Cinnamon cream
For the decoration:
Gel coloring (Wilton, purple, green, yellow)
Decorative figurines (stars, snails, mushrooms, leaves)
Whipped cream roses
Flowers and grass strands for decoration
Quantities are adjusted to the size of the cake and are the same as in the basic recipe I started from.
Preparation method
1. Preparing the bases
Bake each type of base first: one vanilla, one cocoa, and one brownie. Let them cool completely before assembling.
For three tiers, repeat each base as needed – one for each level.
2. Preparing the creams
Prepare the ness cream, blueberry cream, and cinnamon cream separately. Cool them and keep them in the fridge until use.
3. Assembling the tiers
First tier: from bottom to top – vanilla base, ness cream, cocoa base, blueberry cream, brownie base, cinnamon cream.
Second tier: the same as the first (same pattern of layers and creams).
Third tier (heart-shaped, if you want): brownie base with cinnamon cream, vanilla base with ness cream, cocoa base with blueberry cream, creating a heart in purple tones (from blueberry cream and coloring).
4. Decoration
Prepare the decorations 2 days in advance, so they have time to harden: stars, snails, mushrooms, leaves for whipped cream roses.
Use gel colors for shades of purple, green, and yellow.
Mount the whipped cream roses on the cake, then add the leaves.
For the meadow decoration, assemble the flowers and grass strands. This operation takes, on average, 2 hours.
5. Cooling and storage until serving
The cake should be kept cool until the event to maintain its shape and stability.
Why I make the recipe often
Combining these creams and bases brings a balance of taste between chocolate, fruit, and coffee. The layers are clearly differentiated. The cake holds up well even after transport or a few hours on the table at parties. The recipe can be adapted for large servings without issues.
Tips and variations
Tips
Prepare the bases and creams a day in advance to save time during assembly.
The decorations hold up better if made in advance and allowed to dry.
For assembly, work on a flat platter to avoid deforming the layers.
Substitutions
You can use food colorings from other brands, as long as they are gel type.
If you don't have time for complicated decoration, just keep the whipped cream roses and a few leaves.
Variations
For other events, you can change the order or colors of the decoration.
If you want a cake without coffee, use vanilla cream instead of ness.
Serving ideas
Portion the cake directly at the table to show the alternating layers.
You can serve each slice with extra fruit sauce or plain whipped cream.
Frequently asked questions
1. Do the bases need to be baked separately?
Yes, each type of base is baked separately to have clear layers and distinct flavors.
2. What kind of coloring did you use?
Wilton gel coloring – purple, green, and yellow. Other brands can also be used if suitable for creams and decorations.
3. How long do the decorations last?
If made 2 days in advance and kept in a cool, dry place, they hold up well until serving.
4. Can I make the cake with just two tiers?
Yes, you can reduce it to two tiers, adjusting the quantities to the desired size.
5. Can I replace the ness cream with something else?
It can be replaced with a cream without coffee, if you have child guests or people who do not consume coffee.
Nutritional values
Estimate for a slice (from a large cake, about 100g):
Calories: 350-400 kcal
Carbohydrates: 45g
Proteins: 5-6g
Fats: 16-18g
Values are approximate, depending on exact quantities and type of cream used.
Storage and reheating
The cake is stored in the fridge, covered. It can last 2-3 days without losing its texture. Reheating is not recommended – it is served cold or at room temperature. If the cake has been decorated for a long time, it is best to consume it within the first two days to maintain the quality of the decoration and the taste of the cream.
Assembly: - first tier - from bottom to top - vanilla sponge + coffee cream, cocoa sponge + blueberry cream, last layer brownie sponge with cinnamon cream; - the second tier the same as the first; - the third tier - heart-shaped - brownie sponge with cinnamon cream, vanilla sponge with coffee cream, and the last cocoa sponge with blueberry cream, to create a heart in shades of purple. The decorations were made about 2 days in advance and represent the little girl's favorite toys - 2 smiling stars, snails, and mushrooms... and some leaves for the whipped cream roses. To match the mushrooms and snails as best as possible, I created a meadow decor with little flowers and blades of grass - which took me about 2 hours to set up on the cake :) For coloring, I used gel coloring from Wilton - purple, green, and yellow. The satisfaction of the guests was the reward for the work put in.
