Preparation time: 20 minutes

Total time: 1 hour and 45 minutes
Number of servings: 12 savarins

Savarin is a classic dessert that reminds us of childhood, of moments spent in the kitchen with loved ones. This fluffy and aromatic cake is perfect for special occasions as well as for a sweet snack on ordinary days. Moreover, it is a quick and easy dessert to prepare, even for those who do not have much experience in the kitchen.

Ingredients for the dough:
- 250 grams of flour
- 1 egg
- 200 ml warm milk
- 1 packet of dry yeast (about 7 grams)
- 2 tablespoons of sugar
- a pinch of salt
- 3 tablespoons of oil

Ingredients for the syrup:
- 8 tablespoons of sugar
- 400 ml water
- a splash of rum essence (or, for a personal touch, you can use vanilla essence)

Filling:
- apricot jam (or any other preferred jam)
- whipped cream (fresh, for an intense flavor)

Steps to prepare the savarins:

1. Activating the yeast: Start by dissolving the dry yeast. In a cup, combine the yeast with a teaspoon of sugar and 100 ml of warm milk. Let the mixture sit for 10 minutes until it becomes foamy. This is an important step as it helps activate the yeast and ensures an even rise of the dough.

2. Preparing the dough: In a large bowl, place the flour and add the egg, the remaining warm milk, salt, and oil. All ingredients should be at room temperature for better mixing. Add the activated yeast mixture and mix well with a spatula or a dough mixer until you obtain a homogeneous composition, similar to sour cream.

3. Rising the dough: Cover the bowl with a clean towel and let the dough rise in a warm place, away from drafts, for about an hour or until it doubles in volume.

4. Preparing the molds: Grease the savarin molds with oil to prevent sticking. You can use silicone or metal molds; make sure they are well greased to easily remove the savarins after baking.

5. Filling the molds: After the dough has risen, gently mix it to release the air and fill the molds with dough, leaving a little space at the top, as the savarins will rise in the oven.

6. Baking: Preheat the oven to 180°C. Bake the savarins for 20-25 minutes or until they turn golden and pass the toothpick test. If the toothpick comes out clean, the savarins are ready.

7. Preparing the syrup: While the savarins are baking, prepare the syrup. In a saucepan, caramelize the 8 tablespoons of sugar until golden, then carefully add 400 ml of water. Let it simmer on low heat for 5 minutes, then add the rum essence for extra flavor. You can adjust the sweetness of the syrup to your liking.

8. Assembling: After the savarins have cooled slightly, remove them from the molds. Cut a small cap off the top of each savarin and generously soak them with warm syrup so they absorb all the delicious flavor. Place apricot jam on the cut cap and fill the inside with whipped cream. You can also decorate with whipped cream on the outside for a more appetizing appearance.

9. Serving: The savarins can be served immediately or left to cool for the flavors to infuse. I recommend serving them alongside a fragrant coffee or a fruit tea to complete the culinary experience.

Practical tips:
- Make sure all ingredients are at room temperature for uniform dough.
- You can experiment with different types of jams (apricot, raspberry, sour cherry) or even a combination of jams for a diversified taste.
- If you want to add a crunchy note, you can add some chopped nuts or almonds to the dough.
- Savarins can be stored in the fridge for 2-3 days, but they are best consumed fresh.
