Ingredients
For the sponge:
- 7 eggs
- 233 g sugar
- 35 ml water
- 35 ml oil
- 23.3 g cocoa
- 9 and 1/2 tablespoons of flour
For the cream:
- 350 g dark chocolate, broken into pieces
- 1/4 l milk
- 1 teaspoon rum essence
- 2 eggs
- 2 tablespoons sugar
- 250 ml whipped cream
- 70 g yogurt
For the syrup:
- 400 ml water
- 5 tablespoons sugar
- 1 teaspoon rum essence
- zest of one lemon
Necessary utensils
- Round baking pan with a diameter of 26 cm
- Small pan for the extra sponge
- Bain-marie pot
- Mixer
- Spatula
- Baking paper
Step by Step
1. Preparing the sponge:
Start by separating the egg whites from the yolks. In a large bowl, beat the egg whites from the 7 eggs until they become firm and frothy. Gradually add the sugar, continuing to mix until you obtain a shiny meringue. Then add the water, oil, and beaten yolks, gently folding with a spatula from the bottom up to maintain the airiness.
2. Incorporating the dry ingredients:
Sift the flour and cocoa over the wet mixture and carefully mix using the same folding technique until the ingredients are completely incorporated. You will obtain a thinner but very flavorful batter.
3. Baking the sponges:
Prepare the round pan by lining the bottom with baking paper. Pour 3/4 of the batter into the pan and the rest into a smaller pan. Bake in a preheated oven at 175 degrees Celsius for 30-35 minutes. Five minutes before the end, increase the temperature to 190 degrees to achieve a perfect crust. After baking, let the sponges cool completely.
4. Preparing the cream:
To make the cream, place the chocolate and milk in a bain-marie pot. Stir constantly until the chocolate is completely melted. Remove the pot from the heat and let it cool. Then add one egg yolk at a time, mixing well after each addition.
5. Beating the egg whites:
In another clean bowl, beat the two egg whites with a pinch of salt until they form a stable foam. Carefully fold in 1/4 of the egg whites into the chocolate cream, then add the rest, mixing slowly to maintain the airiness. Whip the cream and incorporate it into the mixture as well.
6. Preparing the syrup:
For the syrup, caramelize the sugar in a saucepan, then add the water. Once the sugar has dissolved, turn off the heat and add the rum essence and lemon zest. Let it cool.
7. Assembling the cake:
Cut the large sponge in half. Place the first half on a serving platter, soak it with the prepared syrup, add a layer of cream, then place the other half of the sponge on top, which you will soak again. From the small sponge, cut out circles of different sizes to form the princess's dress. Assemble the circles in the same way: soaked sponge, cream, until you finish all the ingredients.
8. Finishing the cake:
Spread butter on the cake and cover it with colored fondant for an elegant and festive look.
